A plate that contains all the pumpkin's autumn flavor!
For those who love this vegetable, pumpkin risotto is a dish that can not miss. Its preparation is quite simple but the result is extremely tasty and flavourful.
Ingredients:
280g carnaroli rice
400g pumpkin
2 onions
2 carrots
2 stalks of celery
Vegetable broth q.s. (about 1 liter)
EVO oil q.s.
Salt
Pepper as needed
Instructions:
• In a saucepan sauté with oil 1 onion, 1 carrot and celery. Add the diced pumpkin to the pan. Add salt and pepper to taste.
• Cook the pumpkin over a low flame, gradually adding the vegetable stock until it is cooked.
• Meanwhile, pour a little oil in a large skillet and add onion, carrot and celery to brown. Once the whole thing is well golden add the rice.

• Once the pumpkin is ready, blend it with an immersion mixer.
• Combine the pureed pumpkin with the rice and cook for another 5 minutes.
• Serve hot
• To give even more flavor you can serve rice with roasted pumpkin slices and grated vegetable cheese.
