Soft and genuine melon pie, perfect for summer!
What's better than an melon cake? This recipe is easy to make and is always a crowd-pleaser.
Ingredients:
200g Wholemeal flour
40g Rice flour
70g Sugar
140ml Soy milk
100ml Orange juice
60ml EVO Oil
1 sachet of baking powder
300g melon
A pinch of salt
Instructions:
• In a bowl, add the two flours, sugar, baking powder and a pinch of salt.
• Add the liquids (oil, soy milk and orange juice) to the dry ingredients and mix the dough.
• Cut the melon into cubes and add 2/3 of the melon cut into the dough..
• Pour the mixture into a baking mold and decorate with remaining melon.
• Bake at 180°C for about 50 minutes.
