A soft and genuine cake made with cherries and almond flour.
This cake is a perfect dessert for a summer snack and for breakfast! And... everyone knows: "one cherry leads to another!"
Ingredients:
400g of pitted cherries
250g of spelled flour (or fine flour)
100g of almond flour
150g of brown sugar + 1 spoon to dust the surface
250 ml of almond milk (or soy)
50ml of seed oil
16g of yeast
grated peel of 1 lemon
a bit of salt
Instructions:
• In a bowl mix all the dry ingredients (spelled flour, almond flour, sugar, salt and yeast)
• Add to dry ingredients the liquid ingredients (oil and milk)
• Mix well with a kitchen whisk.
• To the mixture obtained add a part of pitted and chopped cherries (about 2/3 of the total cherries). Mix carefully to incorporate the cherries well into the dough.
• Transfer the mixture into a cake pan (22 cm in diameter), previously buttered with vegan butter.
• Add the remaining strawberries to the surface and sprinkle with a tablespoon of sugar.
• Bake in a static oven for 35-40 minutes at 180 ° C, lower the temperature to 170 ° C and continue cooking for 20 minutes.
