BAKED PANZEROTTO

The panzerotto is a culinary specialty of Puglia. The tradition wants it fried but in the oven it is the same delicious and it is also lighter for those who care about physical fitness.





Whether fried or baked, this stuffed pasta bundle is a simple but at the same time unsurpassed goodness. With this recipe you can amaze everyone by organizing an unforgettable panzerottata! Word of 2 Apulians!

 

Ingredients for 5 people:

  

Dough:

500 g Flour "0"

EVO oil 25 ml

10 g of salt

10 g of sugar

5 g Brewer's yeast

Water q.s. (about 300ml)

Stuffed:

Violife vegan mozzarella

Tomato sauce

Oil, salt, oregano q.s.


 

Instruction:

• Sift the flour into a bowl, add salt and sugar.

 • In 100 ml of water at room temperature, dissolve the yeast and gradually add it to the flour.

 • Stir the mixture by adding the remaining water, little by little, until it is smooth and homogeneous.

 • Give the mixture a spherical shape and let it rest in the bowl for at least 2 hours, covering it with a cloth.

 • After 2 hours, pull out the dough, which will be doubled in volume, and divide it into 5 parts, forming 5 balls. Let the spheres rest for another hour covering them with a cloth on a floured baking sheet.

 • After the hour has passed, take a ball of dough and work it with a rolling pin on a floured surface to form a disk of dough about 2/3 mm thick.

 • At the center of the disc put 2 tablespoons of tomato sauce, the Violife mozzarella, finely chopped, a pinch of salt, a pinch of oregano and a teaspoon of EVO oil.

 • Close the dough by forming a half-moon and seal the edges well, first pressing with your fingers on the edges, then folding the dough around the edges inward and finally press the edges with the prongs of the fork to prevent the filling from coming out .

 • Transfer the panzerotto formed on the baking sheet. Brush the top surface of the panzerotto with the tomato sauce.

 • Prepare all the panzerotti with the same procedure and bake in a static oven for 20 min at 200 °C.


Advice:

If you want to try many other variations of panzerotti, you can change the dough. For example, you can do it completely with whole wheat flour, kamut flour or mixing more flour. If you want you can also try changing the filling by adding vegetables, sliced vegetables or vegetable wurstel.
